Default Need a little help with polylines..

Ok, well, I've been working on this for the last couple of days and pulling my hair out! (I actually don't have any hair) I read all the posts I could find...

Ok, what I am trying to do is make a guitar.
I have the photo of the guitar as my background image.
I pick the polyline tool, I've also tried the polygon tool.
I outline my guitar.
When I use the polygon tool my guitar goes all black.
It started out white, then as soon as I cross a line, when I am tracing, it goes black. The final outline does not have any overlaps. I just happened to overlap while I was tracing, because the way the guitar is shaped.

When I use the polyline tool,
I outline the guitar, go into vertex mode, pick all the vertex.
Create a 2d mesh. Then I go to delete some surfaces that the
2d mesh made and my model is black in some spots and won't extrude correctly.

My final trace would not have any overlaps or anything like that.

I even tried it with a simple drawing. I drew (polygon tool) a octagon, kinda. Picked the object in surface mode. Tried to extrude, but it would'nt! I am so confused, here..
I must be missing something.

What would the correct steps be to:
1. Trace a object (like a guitar)
2. Then surface it.
3. Then extrude it with caps on both ends.

So simple, but I am not comprehending...
I think in one of my steps, it is leaving behind vertex or something.
